    Heat oven to 350°F. Place cereal in food processor, process until finely crushed. Reserve 1/4 cup crushed cereal.

    In large bowl, break up cookie dough. Using hands, mix in remaining crushed cereal.

    Shape dough into 20 (1 1/2-inch) balls; roll in reserved 1/4 cup crushed cereal. Place 2 inches apart on ungreased cookie sheets.

Spicy Cauliflower Rice, Cinnamon-Paprika Sweet Potatoes & Avocado Mash

A few weeks ago, I posted a photo of the above meal to Instagram and Facebook without giving much thought to it. It was a combination of two different recipes from the blog with a few twists and adjustments, and I had thrown it together in a pinch before Dan and I settled in to watch a movie. It appeased my inattentive taste buds but I thought the combination was a bit random to appeal to the masses.

I should probably stop making assumptions because a few days later while I was catching up on social media, I noticed that my Facebook post had garnered a handful enthusiastic requests for the recipe. There were even a few comments with kindly-conveyed undertones of frustration because I hadn't shared the details of what was in my haphazardly-concocted meal. I got the message, and I figured I better do something about it.

In response to all the hubbub, I decided to remake the combination and share the exact recipe on the blog. It's a modified combination of this rice and this power bowl with adjustments to the rice to pair better with the spiced sweet potatoes and a kick of garlic in the avocado mash because why not? Garlic is awesome.

The result is a bit of a hodgepodge of flavors, textures, and colors, and I love it. The spicy cauliflower rice warms and entices the cinnamon-paprika sweet potatoes comfort and soothe and the avocado mash seamlessly unites two elements that might otherwise taste chaotic and incoherent when nestled up in the same bowl.

I can't get enough of this meal right now, and I've made it four times in the last two weeks. There's something a little magical and swoon-worthy about its randomness. I hope it was worth the wait and that you enjoy it as much as I do!

Comfort Food Mash-Ups, Remixed: Cheesecake + Carrot Cake

Surfing the wave of mash-up mania that brought the world the Cronut™ and ramen burger, we decided to beat winter by partnering with our brilliant culinary team in Food Network Kitchen to come up with THE most comforting comfort food. Together with Cooking Channel, we’ve mashed up some classics to create all-new recipes that deliver double the comfort. Over the next several weeks, we’ll be revealing the ways we mixed and remixed some of our favorite dishes, with one recipe appearing on Food Network and another on Cooking Channel.

This week's mash-ups feature a marriage of two classic, comforting cakes.

Many would agree that the cream cheese frosting is the best part of any carrot cake, so for Food Network's mash-up recipe, we replaced it with a thick layer of creamy cheesecake. The cinnamon-and-ginger-laced carrot cake layer is baked first after it has cooled, the cheesecake mixture is poured over top. The stacked cake returns to the oven for an hour and once baked and cooled, it’s dressed up with a sour cream topping and chopped pecans. These two classics make one showstopping mash-up dessert.

Recipe Summary

  • ⅓ cup butter
  • 1 cup packed brown sugar
  • 3 teaspoons ground cinnamon
  • 2 cups all-purpose flour
  • 2 tablespoons white sugar
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • ¼ cup butter, chilled
  • 1 cup cold milk
  • ⅓ cup currants
  • ½ cup confectioners' sugar, sifted
  • 3 tablespoons milk

Preheat oven to 400 degrees F (200 degrees C). Grease the bottoms and sides of a 12-cup muffin tin.

Cream 1/3 cup butter, brown sugar, and cinnamon together. Drop 1 teaspoon into each muffin cup. Reserve the remaining mixture.

In a large bowl, combine flour, sugar, baking powder, and salt. Cut in 1/4 cup cold butter until crumbly. Make a well in center, and pour in the milk. Stir to form a soft dough, adding a bit more milk if needed.

Turn the dough out on lightly floured surface. Knead 8 to 10 times. Pat dough into rectangle about 1/3 inch thick and 12 inches long. Spread the remaining cinnamon mixture over dough rectangle. Sprinkle currants over top. Roll up like a jelly roll into a long log. Mark the dough first, to make sure you know where to cut, then cut the log into 12 slices. Place cut-side down in the prepared muffin pan.

Bake in in the preheated oven until golden brown, 20 to 25 minutes. Turn rolls out on a serving tray.

For the glaze, add milk to the confectioners' sugar and stir well, adding more liquid if necessary to make a thin glaze. Drizzle over cinnamon rolls.

My Man’s Potato Flake Cinnamon Rolls

1 pkg. dry yeast
1/2 cup warm water
1 TB sugar

Prep yeast as directed on pkg. Then add:

1/2 cup oil
1/2 cup sugar
1 tsp. salt
1/2 cup potato flakes (this is the SECRET–just use regular mashed potato flakes)
2 eggs, beaten
1 1/2 cups milk
4 1/2 cups flour

Mix all ingredients until you have a nice dough. Then follow the next steps below:

If you’re looking to make these in advance that’s totally fine! Follow the steps above if you would like to make them more than 3 or so days ahead. If you would like to make these and give out to friends as part of a cookie platter they will stay soft and fresh for about 3-ish days.

Just make sure they are stored airtight in a container or bag, and you should be good!
