Omelet with potatoes and sausages

We clean the potato, wash it and cut it into small cubes, then we fry it (stewed) in 2 tablespoons of oil, with the lid on.

When the potatoes have softened, add the sliced ​​sausages and let them brown a little (so the potatoes will taste like sausages), then we will put the sliced ​​olives.

Meanwhile, beat the eggs with a pinch of salt, pepper and paprika.

Add beaten eggs well over potatoes and sausages.

When we turn it, we use the lid of the pan as follows: by a quick movement we turn the omelet over on the lid and vice versa, so it will remain whole and will not break.

We do the same when we put it on the plate. (We will put the plate on top of the pan and with a quick movement we will turn it over).

Optionally season with finely chopped green parsley.

Boil the potatoes in salted water until they start to soften. Drain them and set them aside. Cut the sausages in half. Heat two tablespoons of oil in a pan and fry the sausages for 2 minutes until golden brown (on both sides).

Put them on a plate and fry the bacon slices for 1 minute, then put them on the same plate with the sausages.

Add the remaining oil and butter, and fry the potatoes until crispy and golden. Season to taste and set aside.

Add the remaining butter and mushrooms to the pan, salt and pepper and fry over high heat until soft. Place the sausages, bacon and potatoes in the pan and arrange all the ingredients so that they come in contact with the bottom of the pan.

Beat eggs with a little salt and pepper, pour them into the pan and leave everything for about 15 minutes (on low heat) until the eggs are almost set.

Heat the oven (or microwave) grill, salt and pepper the tomato slices and place them on top of the omelet. Place the pan under the grill and leave the omelette there until golden brown and the tomatoes have softened.

I often prepare this omelette in the oven with potatoes and various meat dishes, especially on weekends when the refrigerator is crowded with various meat dishes, such as: meatballs, steak or sausages.

It is a filling combination, which can be served either for breakfast, with a glass of yogurt, or for dinner, plain or pickled.

How to prepare the delicious baked omelet with potatoes and various meat dishes!

We place among the potatoes the meatballs cut in half and the pork tenderloin, also sliced ​​thinner.
Mix the 4 eggs with a little salt and pepper and spread them over the ingredients in the bowl.
Place the tomato branch in the middle and put the dish in the oven for 20 minutes, or until the omelet is ready.
5 minutes before turning off the heat, I sprinkled over the omelet and a little grated cheese to make a nice gratin.

You can also add parmesan or various salted cheeses.

Serve hot, without bread, with fresh vegetables or pickles, or with a glass of yogurt.
